]]> Our Inaugural Release is a limited edition bottling of an ex-bourbon cask & a French red wine cask from one of the most prestigious wineries in the world, Château Margaux.

Made from 100% floor-malted English barley, fermented over 8 days in open top wooden washbacks using 2 yeast strains, and aged on site at our distillery for just over 3yrs.
This single malt whisky showcases an incredible range of flavour & depth to it.

Nose – Dark Chocolate, Stewed Plums, Black Cherry, Honey.
Palate – Smarties, Tart Raspberry, Malted Milk Biscuits, Vanilla.

Signature Serve – Sip neat or make an old fashioned!

]]> Our English apple brandy is made using 100% waste organic apples that we have handpicked within a 10 mile radius of our distillery. This orchard spirit captures the true terroir of Oxfordshire apples using over 16 varieties.

Aged for a minimum of 12 months in ex-whisky casks and bottled at 40% abv. An explosion of crisp green apple, caramelised apple tarte tatin on the palate backed up with a delicious oak toastiness, honey & spice.

This 2024 vintage release is limited to only 220 bottles.

]]> Our classic styled London Dry gin is made with 8 botanicals using a recipe that took us 56 batches to get exactly right. We are super proud of our flagship gin. Unashamedly juniper-forward with warming and complex notes of cardamom and fennel, balanced with the earthy angelica root. Floral on the nose, and bursting with juniper & citrus on the palate with a subtle anise finish.

Tasting Notes –
Nose: Floral notes & piney juniper, violets.
Palate: Dry and Juniper heavy, spiced citrus, lemon peel
Finish: Warming earthy notes with a sweet anise finish.

]]> One of the craziest spirits we have ever produced! We wanted to push the boundaries of craft gin production & create something truly different. Introducing our Cask-Aged Gin. Our signature London Dry gin is aged for a secret length of time in Octave casks from a Speyside distillery in Scotland. Originally an Oloroso sherry cask, they then matured a single malt whisky for over a decade, taking on rich new complex flavours. A double gold medal winner!

Tasting Notes –
Nose: Lemon, candied stone fruits, subtle woody hint.
Palate: Caramel & marmalade notes at the front backed up by the Juniper & sweet spice from our London Dry.
Finish: Light vanilla. Warming with mild tannin & a dry spice from the European oak.

Signature Serve – Serve tall over ice with a premium ginger ale or use in a martini. This gin can also be enjoyed neat.

Awards – Gold Medal scoring 95/100 in the Aged Gin Category IWSC 2021. Category winner!
