English SINGLE MALT WHISKY

Our journey to create exquisite whisky.
There's a method to our madness, creating maximum flavour at every step.
Grain Selection

Provenance & terroir are key elements for our whisky production. To produce a high quality whisky, we need high quality grains.
Working closely with our grain supplier Warminster Maltings, we use 100% English grown barley. This malt stands apart from the rest, traditionally floor malted by hand to allow maximum flavour extraction.
We also use a selection of rye, maize & wheat for our other styles of whisky.

Fermentation

We are using open-top wooden oak washbacks for our fermentation. These have been lightly charred to activate the inside surface for interaction with the wort.
Fermentation time is long, always a minimum of 7 days, and the open top tanks allow wild yeast to create additional layers of flavour in the beer. This in turn produces a unique whisky that you can’t replicate anywhere else.

Yeast

For our single malt whisky our head distiller has chosen 2 yeast strains that are pitched at different stages of the fermentation process. This produces a delicious & complex beer that’s full of super fruity notes & layers of spice; Cherry jam, raspberry, cooked plums, malted milk biscuits, honey & chamomile.
But we dont just make 1 style of whisky, we produce 6 styles of whisky using 9 yeasts, striving for new flavour profiles at every turn.

Distillation

Our 650L hybrid whisky still, Big Phil, was custom made for us and tailored to the style of whisky we want to produce in one single still run.
The first part of the distillation sees our new make spirit pass through the whisky helmet of the pot. The large bulbous design maximises copper contact with the alcohol vapour creating more reflux and a smoother spirit.
The second part of the distillation run engages our 6 plate column section creating a clean & lighter bodied spirit with an incredible structure to it.

Maturation

We believe in creating huge flavour in our spirit before we even reach the aging process. Maturation for us is about enhancing & complimenting those flavours, developing the spirit further over time into an exquisite whisky. Our barrel selection mirrors this ethos, choosing only the finest casks from around the world.
Our inaugural release is scheduled for September 2026.
