We have now commenced our single malt whisky production by fermenting our first batch of malted barley this week. What a milestone for us!!!
Becoming a whisky producing distillery was always my end game and our new distillery site enables us to now venture into this uncharted yet exciting era for our distillery.
I have selected 4 different strains of yeasts to begin our test batches over the coming weeks. This R&D phase will allow us to sample an array of new make spirit, all with very different characteristics from each other. It becomes a process of elimination after taste testing to see which one comes out on top and select for our whisky programme.
