Description
We picked a load of Victoria plums last year, crushed them and left to wildly ferment for 4 weeks with the stones in.
Once distilled, the spirit has been left for 8 months in a stainless steel tank to allow the flavours to develop, slowly diluting down to bottling strength at 41%. An explosion of crisp, floral notes lead into cooked plums & waves of almond. On the palate this eau de vie has a lovely viscosity with a long finish. Sip to savour this fruit spirit.
This 2024 vintage release is limited to only 45 bottles.
